I think solutions like jitsi use peer to peer when there are exactly 2 clients, whenever there are more they switch to SFU mode. We always use an SFU, even with just 2 people in a room. However, full peer to peer connections will work as long as the clients have sufficient bandwith, the SFU is just a trick that saves some bandwith in the up direction.

(SFU = Selective Forwarding Unit, an architecture where a central server receives streams from all participants and forwards them to their peers accordingly, like this:)

Ah I see. How many SFU users can be supported per server - perhaps the fly.io servers for example?

Hi, first thing to note is that fly.io is probably not the best platform to deploy a WebRTC app, due to issues with UDP connectivity.
